Superfood Energy Bites

Hi there! Today, I'm here with you to share a recipe that's very close to my heart and definitely one of my favorite. If you know me, you'll know how much I love energy bites- they're the perfect snack, the perfect pick-me-up when you're feeling down and
they're usually packed with nutrients.
These ones right here have a dreamy caramel flavor due to the maple syrup, so you don't wanna miss out!
Today's energy bites is packed with ingredients that are considered "superfood"...
What's a "superfood"?
Foods that are packed with nutrients, like antioxidants, omega-3, healthy fats, fiber and protein, are considered to be superfoods. The name comes from their benefit for the human body and it resonates with the power these ingredients have. For example, nuts, legumes and berries are considered to be the ultimate superfoods, as they are very high in antioxidants and omega-3/healthy fats.

In these Superfood Energy Bites, I included a variety of nuts, like almonds, walnuts, cashews and hazelnuts and also, dried goji berries which have a reputation of being one of the highest foods that contain high levels of antioxidants and are one of the most popular known superfoods out there!

ingredients:
1 cup walnuts
1 cup mix of hazelnuts, cashews and almonds
1/2 cup dried goji berries
15 dates, soft/fresh
2 tablespoons maple syrup
ground pistachios for decoration(totally optional)

directions:
-place the 2 cups worth of nuts in a food processor and gently crush them slowly, because in this recipe, we want big chunks of nuts to remain
-add the dried goji berries and keep blending for another 10 seconds
-add the remaining ingredients, such as maple syrup and dates and blend everything well until you end up with a sticky mixture that you can form little bite-sized balls from
-make the energy bites and place them in the fridge for 1-2 hours so that they can harden

The reason why I love these energy bites so much is because they're ultra crunchy and chewy, because they have big pieces of nuts in there. I really hope you try these because they're truly so delicious and also nutritious!
