Coconut Lemon Energy Bites

Summer is here and these energy bites are the perfect refreshing snack/ dessert, in my opinion! They're sweet, they're juicy and lemon-y! I can honestly say these Coconut Lemon Energy Bites are one of my favorite summer desserts- wholesome, light on the tummy and all in all- delicious!

They require only a few ingredients and believe me, you'll make them in no time! That's something I'm really passionate about- making recipes that are simple, easy and don't take much of your time! Plant-based living is actually like this most of the time and that's one of the things I love about it the most!

ingredients:

-1 cup raw cashews

-1 cup coconut flakes

-1 cup fresh/soft dates

-fresh juice of 1 lemon

-the zest of one lemon

directions:

-add the cashew and coconut flakes to a food processor and blend them for about 30 seconds/ until well grounded

-add the remaining ingredients, such as lemon juice, lemon zest and dates

-blend for an additional 1 minute or so/until everything is well mixed and you have a sticky mixture

-form little bite-sized balls from the mixture and place them on a plate/ in a container, leaving them in the fridge for about 2 hours to chill

As a decoration, I dusted them with some coconut flakes, but this is totally optional! Feel free to enjoy them just as they are!
