Blueberry Almond Energy Bites

Another day, another energy bites recipe! I'm obsessed with making energy bites these days because they take just 20 minutes to put together and then you have a ready snack/ dessert!

These Blueberry Almond Energy Bites are definitely the perfect pick-me-up snack for when you're having a break from working, studying or else. They're made with wholesome ingredients, they have an amazing texture, sweet but tangy at the same time.

The most amazing part of this recipe is that energy bites are actually loaded with protein from the nuts, meaning that per serving(one little ball) you get 5 grams of plant-based protein (how cool is that?)!

ingredients:

-150 g almonds, raw

-200 g dates, fresh/soft

-3 tablespoons almond butter(I used my homemade GirlAroundTheFood Almond Butter)

-2 tablespoons blueberry powder

directions:

-in a food processor, add the almonds and blend until they've achieved a flour-like consistency

-to that, add the blueberry powder, followed by the dates and almond butter

-keep on blending until you get a sticky mixture that you can form little bite-sized balls from*

-roll the mixture into little balls and place them on a plate, leaving them in the fridge to cool for at least 2 hours


*if your mixture is still crumbly, just

add a few more dates or some more almond butter

This time around I left them half plain and as for the other half, I dusted them with organic carob powder, which gives them an amazing flavor and truffle look!
