Blueberry Lemon Energy Bites

These Blueberry Lemon Energy Bites are the perfect pick-me-up snack and the perfect little dessert for the upcoming summer months. They’re extremely delicious and refreshing and you’ll need just 5 ingredients!

I firstly tried these at a healthy food spot in my hometown and I fell in love with the taste. That's how I got the idea to make these and I'm so happy I can make them at home now.

ingredients:

-100 grams raw cashews

-100 grams coconut flakes

-150 grams fresh/ soft dates

-2 tablespoons blueberry powder

-2 tablespoons fresh lemon juice

directions:

-place the cashews and coconut flakes in a food processor/ blender and grind them until you have a sand-like consistency

-them add the blueberry powder and pulse again

-add the remaining ingredients- dates and lemon juice and blend until you end up with a sticky mixture (one which you can form little bite size balls from)

leave the energy balls in the fridge to cool for about a hour and then, they'll be ready for you to enjoy them
