Warm Mediterranean Bruschetta Toast

Hello hello! Today, I have a very special recipe for y'all and a very delicious and rich in flavor one too-Warm Mediterranean Bruschetta Toast! As I kid, I used to love baked rolls(snacks that are sold in supermarkets) with a tomato and oregano flavor, so this recipe really reminds me of those times! It's loaded with healthy fats, antioxidants and vitamins(from the olives), also very rich in flavor and spices, like Mediterranean oregano.
You can enjoy this meal as lunch (as I did a couple of days ago), but also make a great afternoon snack, so the choice is yours!

ingredients:
-3 large fresh tomatoes, cut into little squares
-2 green peppers, finely diced
-80 g kalamata olives, finely diced into little squares
-2 handfuls of fresh arugula, finely diced
-1 teaspoon sea salt
-1-2 tablespoon dried oregano
-2 tablespoons balsamic vinegar
-80 g sun-dried tomatoes, finely diced into little squares
-2-3 garlic cloves, finely minced
-freshly cracked black pepper
-few pieces of toasted bread(see notes below)

directions:
-prepare(dice) all of the needed ingredients and add them to a medium bowl
-add the spices and mix well
-add the balsamic vinegar and stir everything until it's well combined
how-to enjoy:
-you can add this Mediterranean mix to salads, burritos or eat it just like that(why not?)
-(I personally prefer this type of way by making an original bruschetta toast) take a few pieces of bread(I used corn bread, but every type works) and by adding a drop of olive oil on both sides, place them in a pan on medium heat and toast the bread for a couple of minutes on both sides*.
-then, on the warm piece of bread, just add your Warm Mediterranean Bruschetta mix and bite into it!
*alternatively, you can do this step in a toasted, if you have one :)
