Red Lentil Burger Patties

Hello, lovely people! I'm really happy that I'm finally sharing this delicious recipe that will make your life a bit better! These Vegan Red Lentil Patties are the perfect substitute for regular burger patties, they're definitely very delicious, rich in flavor and light for digestion and plus, these are packed mainly with plant protein, fiber, iron and they're low in calories. All in all- they rock!

Without further ado, let's hop on the recipe and see how we can make them!

ingredients:

-1 cup red lentils (1 can store-bought lentils work as well)

-half a onion, diced

-3/4 cup wholewheat flour

-1 flax egg*

-spices: salt, pepper, turmeric, red pepper and ground cumin**

**all of the spices are optional, you adjust them to your taste, of course except for the salt and red pepper

method:

-cook your 1 cup of red lentils; cooking lentils is literally so easy to make, it only takes like 5 minutes. You just pour water a little over them and when they start to boil, you rinse the water and place them again on the heat so that they boil again and when they do, you reduce the heat and keep an eye on them, because you don't want the legumes to pop. When the lentils are becoming soft remove them from the heat and set them aside.

-in a saucepan, saute the onions with a little bit of vegetable oil and salt for a couple of minutes/until they onions are lightly golden

-add the saute-ed onions to the cooked lentils and the flax egg* and stir them through

-now, with a fork or a big masher, mash the lentils until you make them a paste and then, add the spices and start adding the flour bit my bit, mixing along

-3/4 cups of flour should be enough, just make sure that in the end you get a batter that you can form shapes from

-depending on the size you'll be making them, this recipe makes 12 medium burger patties

-on a medium high heat, with a bit of vegetable oil, fry these patties for a couple of minutes on each sides(note that they don't take much to be fried, so keep an eye on them, okay?)

-take one tablespoon of ground flax seed and place it in a cup, along with 3 tablespoons of water

-stir it nicely and let it sit for 5 minutes

-after the 5 minutes are up, you'll notice that it's become thick and it's has a gel-like consistency

-aaaaaaand that how you make a flax egg :)


*substitute for an actual egg, but it does the same job

And there you go, y'all! I'll give you a little tip here: these work perfectly well even if they're stored in the freezer, if you want to have a stack ready on hand, just put them in air-tight containers, freeze them and when you have the desire to enjoy them, you just take them out and heat them. I served them today with baked sweet potato and regular potato(not in the photo), a bit of homemade Hummus and with a side of lettuce+spinach salad and baby onion(yes, please!). Bon appetit!
