Vegan Peanut Butter Chocolate Eggs

What will happen if I tell you that this dessert calls for only five ingredients, will take 20 minutes of your time to make and there's a chance you'll eat everything in a heartbeat?


This dessert is perfect for the upcoming holidays, but it's also a casual, easy and delicious treat you can have everyday. The texture feels really good and everything just gets better with the dark chocolate and that orange zest on top-arghhhhhhhhhhh! HEAVEN.


ingredients:

-1 cup pure peanut butter

-2 tbsp(tablespoons) coconut oil, melted

-3 tbsp maple syrup*

-1+1/2 cup almond meal/ ground almonds

-50 g melted dark chocolate, for coating

*you can use honey if you're not vegan or any other sweetener



method:

-in a big bowl, mix all the"wet" ingredients together

-to that, add little by little of the ground almonds

-you'll stop adding the almonds when you're left with a cookie dough mixture

-from the dough, make egg-like shapes and place them on a plate or tray

-when you're done, place them in the freezer for 10 minutes, so that they chill

-in the meantime, with a little bit of coconut oil, melt the dark chocolate and with a tablespoon, pour over the cookies of the melted chocolate

-while the chocolate is still liquid-y, you can decorate your eggs with coconut flakes, lemon or orange zest, dried fruit like goji berries, crushed up frozen raspberries, crushed nuts like almonds or hazelnuts, pistachios...whatever you think of, really!

-place them in the freezer for additional 10 minutes so that the chocolate solidifies

NOTE: they're best kept in the fridge/ freezer because they melt easy at room temperature


These are the perfect pick-me-up snack after lunch or around noon-they're cold, rich in flavor, chocolate-y and that orange zest really gives them taste like Jaffa Cakes- absolute heaven in my opinion. They're healthy, guilt-free and cruelty-free. I really hope you try these- don't miss out!
