Raw Cacao Goji Energy Bars

I'm a big fan of energy bars because they're very delicious, often made with few simple ingredients and they're so easy to take with you and just have them hanging around in your backpack for whenever you need a snack! So, I decided to make my own energy bars at home, so that I can cut back on packaging and create less waste and also, I was really excited to be in the kitchen and just experiment with ingredients, making my favorite flavors.
These Raw Cacao Goji Energy Bars are the perfect combination of sweet chocolate flavor and also, that roasted flavor from the nuts makes it all better. I always tend to use simple and nutritious ingredients, so that I have a wholesome snack/ meal on hand and nourish my body as well. The goji berries here are a big booster, as they're considered a superfood, therefor they're loaded with antioxidants, which is great for us!

ingredients:
200 grams nuts of choice
12 soft dates
30 grams dried goji berries
2 tablespoons raw cacao powder
2 tablespoons peanut butter
1 tablespoon melted coconut oil
pinch of sea salt

how-to:
place the nuts in a food processor and blend them for a couple of seconds
add the remaining ingredients and blend that until everything is well combined and you're left with a sticky mixture
in a rectangle-shaped container (covered with baking paper) pour over the mixture and with the back of a spoon, evenly distribute it to the surface and make it even
place it in the freezer for at least 2 hours and after that, cut it in a shape of a bar
