Hazelnut Cacao Energy Bites

Hello people! I hope you're safe, happy and sane during these times. I've got something today that will make your lives a lot sweeter- Vegan Hazelnut Cacao Energy Bites! These are the best energy bites I've made so far- it doesn't get better than this. They taste exactly like Nutella but these are healthy, sugar-free, natural and nutritious!

They're the perfect pick-me-up snack and dessert for when you're feeling down, craving something sweet but nutritious at the same time or just when you're bored and you want to eat(we've all been there)! They also remind me a lot of Ferrero Rochers if you've ever had them but these are made of pretty simple ingredients and take just 20 minutes to prepare.

ingredients:

-200 g hazelnuts, roasted

-200 g soft dates, pitted

-2 tablespoon raw cacao powder

-80 g dark chocolate, melted + little bit of coconut oil for melting

directions:

-place the hazelnuts in a food processor/ blender and blend them until they've achieved a sand-like texture

-add the cacao powder and blend for an additional minute

-finally, add the dates and blend until you end up with a sticky mixture that you can for bite-sized balls from

-in a cooking pan, melt the dark chocolate with the coconut oil

-gently, with a tablespoon, place every ball one by one in the melted chocolate, roll it around and then with the tablespoon take the chocolate-covered ball out

-place them on a plate/ tray

-place them in the fridge for 3 hours to solidify*


*keep them in the fridge, because at room temperature, they melt easily

Honestly, they're so so so so so delicious and sweet and chocolate-y, you won't be able to stop yourself from eating them all at once. I really hope you do make them, because they're a real treat!
