Beetroot Red Bean Burger Patties

Hello people! I hope you're all doing well. I'm here today to share an incredibly delicious recipe with y'all-these beetroot red bean patties are very delicious, rich in flavor and so so so wholesome! You'll need only a few ingredients, that I'm sure you have around in your kitchen and it won't take you long to prepare them!

For presentation purposes, I made classic veggie burgers, but personally I'd rather eat them like that with a side of a salad and maybe potatoes. But they make hell of a veggie burger! Just look at that beautiful vibrant purple color- just plant-based ingredients!

ingredients*:

-2 medium beetroots(shredded)

-1 cup red kidney beans, from a jar

-1 cup walnuts**

-1/2 cup oat flakes**

-3 tbsp(tablespoon) ground flax seed**

-1 tsp(teaspoon) sea salt

-pinch of freshly-cracked black pepper

-1 tsp paprika powder

*this recipe make 4 large patties, but you can also make 8 medium size ones

**these ingredients are a substitute for regular flour, but feel free to use flour instead(1+1/2 cups to be exact)

method:

-in a food processor/ blender mix the walnuts, oats, ground flax seed and all the spices until they for a flour-like texture. Set that aside.

-to a food processor/ high-speed blender add the shredded beets, red kidney beans and the "flour" mixture. Blend until it forms a sticky mixture that is thick enough that you can form patties from

-first, make a round-shaped ball and then press it between your hands so that it makes flat patties


Note: you can either fry them on a pan or bake them in the oven with a little bit of oil, until they're crispy on the outside and fully cooked on the inside(aprox. 8 minutes on each side, depending on the heat you're cooking them on

So, like I said, I made veggie burgers with this patties and they consisted of:


1 layer: homemade hummus

2 layer:fresh homegrown arugula(rocket)

3 layer: one Beetroot Red Bean Veggie Pattie

4 layer: vegan mayo

5 layer: one tomato slice, red onion, more arugula


You can enjoy the with a side of Crispy Oven-Baked Fries/ boiled potatoes and a fresh salad- the dream!!!
