Salted Caramel Energy Bites

Hello everyone! I don't know about you, but I'm kinda seeing a pattern here at GirlAroundTheFood with all the energy bites recipes. Well that's because I genuinely love energy bites and I think they're the easiest snack/ dessert you can make- it's grab'n'go, it's small, tasty and delicious.

I just made these for the first time a few night ago, when I suddenly felt a need for something sweet and I didn't have any kind of dessert at home at the time. Really, I just put together everything I've had on my mind that I thought will taste amazing when combined.

ingredients:

-2+1/2 cups raw cashews(you can substitute them with hazelnuts, almonds, walnuts etc.)

-2 cups soft dates

-1/2 teaspoon cinnamon

-pinch of sea salt

-3 tablespoons full-fat coconut milk (from a can)

instructions:

-in a food processor/blender, place the nuts and blend them until they've achieved a flour-like texture

-add the cinnamon and blend for about 10 seconds longer

-finally, add the dates(make sure you pit them first) and the coconut milk, followed by a pinch of salt

-blend everything until you get sticky mixture that you can form bite-size balls from

-after making the energy bites, place the on a place/in a container and put them in the fridge for about an hour to harden and set

-serve to enjoy!

Mmmmmm, they just look so so good! The verdict is that they're easy to make, require a few simple ingredients and are the perfect pick-me-up or on-the-go snack!
