Peanut Butter Truffle Energy Bites

Searching for the perfect chocolate-y snack to grab when you're feeling down? I've got you covered, no worries. One day I was experimenting in the kitchen and made this heavenly energy bites that are my favorite thing to eat when I need a pick-me-up while studying, after lunch or just when I'm feeling extremely bored and i just wanna eat something( we've all been there, am I right?).

Just a few steps, simple ingredients, easy to make and they'll take just 20 minutes of your time to make. Let's go!
ingredients:
-1/2 cup raw cashews + 1/2 cup roasted unsalted peanuts (ypu can use a total of 1 cup of peanuts if you're a big peanut fan)
-1/2 cup soft dates(with the pits removed)
-2 tbsp cacao powder
-pinch of salt
-1+1/2 tbsp smooth peanut butter
-melted vegan dark chocolate*
*you can skip the coating-with-chocolate part if you're not a big fan of chocolate, but I'm telling you that this energy bites coated with pure dark chocolate are a different type of indulgent pleasure.
directions:
-add the cashews and peanuts into a food processor;
-when they're finely grounded, add to that the cacao powder, dates and peanut butter;
-blend the mixture until it ends up being sticky enough so that you can form little bite-sized balls;
-it should form around 18 balls;
-melt the dark chocolate on medium-high heat in a pan and pour it in a mug;
-with the help of a tablespoon, place one ball at a time and pour over some melted dark chocolate over it. Repeat this step and place your energy bites on a tray covered with aluminium foil or baking paper;
-place them in the fridge for a minimum of 4 hours;
-don't forget to enjoy them . :)
