Peanut Butter Breakfast Pancakes

Hello! I don't know about you, but pancakes are one of my favorite meals to have, because they're incredibly delicious, they're very versatile and easy to make and you just have so many options on how to make them, using different flours, adding spices, using sugar or natural sweeteners etc.
I also like making pancakes because every time I experiment and I'm not intimidated to try something now. So, this past weekend I tried these Peanut Butter Breakfast Pancakes, using some homemade pure GirlAroundTheFood Peanut Butter and corn flour. They turned out so delicious and all in all, so simple to make! So let me show you how-to!

ingredients:
1/2 cup buckwheat flour*
1/2 cup corn flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 bananas, ripe and mashed
1 cup plant-based milk
1 heaping tablespoon peanut butter
coconut oil** (for cooking)
*prefer to use buckwheat flour in my pancake recipes because it's so much nourishing than plain flour, like white flour. Feel free to use any type of flour that you prefer/ enjoy here, like rye, wholegrain, coconut, almond, oat flour etc.
**feel free to use any other oil

directions:
-in a big bowl, mash the bananas and to them and add the plant-based milk and peanut butter (basically all the wet ingredients). Mix them all together.
-to that, add the remaining flour, baking soda, baking powder and cinnamon
-give the blend a goooood mix until you get a thick (doesn’t run off the spoon) pancake batter
-leave the blend to sit for 5 minutes while you prepare your frying pan on the stove on the medium high heat
-add a teaspoon of oil and let it melt , additionally adding more oil later on as you're making the pancakes
-I take out two tablespoon of the pancake mixture and place it on the hot frying pan
-cook each pancake for about 3 to 5 minutes or until tiny bubbles appear on the surface- then you flip it.
-this recipe makes 12 small- size pancakes in total

I really like to enjoy pancakes with GirlAroundTheFood's Homemade Chocolate Hazelnut Spread, but I didn't have that on hand, so instead, I used homemade GirlAroundTheFood Peanut Butter, homemade GirlAroundTheFood Almond Butter, homemade GirlAroundTheFood Raspberry Chia Jam, some banana coins and a drizzle of maple syrup(because why the heck not!?)
