Buckwheat Cacao Granola

Here we are, yet again with another granola recipe! This time, we're combining the crunchiness of buckwheat seeds and rolled oats with the chocolate-y taste of cacao powder, making this granola the perfect breakfast for the ones with a sweet tooth.

A simple and easy recipe to make, requiring only 10 minute to whip together, 20-ish minutes to bake and 5 minute to prepare in the morning. You can enjoy this granola with some yogurt (sadly, I don't have any plant based on hand *cry*) or some plant based milk with bananas, frozen fruits, cinnamon and let's not forget the nut butter.

ingredients:

-2+1/2 cups rolled oats

-1 cup buckwheat seeds*

-3/4 cups coconut flakes

-2 tbsp (tablespoons) cacao powder

-1 cup walnuts, chopped**

-1 tsp (teaspoon) cinnamon

-pinch of salt


-1/2 banana, mashed

-3/4 cups peanut butter***

-1 tsp vanilla extract

-couple of tbsp of desired sweetener (optional)****


*you can find buckwheat seeds either in supermarkets( from Vitalia) or you can buy them in bulk, like I do, from Bako


**you can use any other combination of nuts, doesn't have to be only walnuts


***you can use any other nut butter here. You can also substitute it with tahini, like we did in the previous granola recipe


****if you want your granola to be a bit sweeter (I find it sweet enough with the banana only)

directions:

-turn your oven on at 180 degrees Celsius

-combine all of the "dry" ingredients in a big bowl and stir to combine

-to that, add all of the "wet" ingredients, such as banana, peanut butter and vanilla extract

-when everything is well incorporated, prepare a baking dish, line it with baking paper and transfer the mixture onto the surface

-bake it for about 20 minutes or until lightly golden. Keep an eye on it and stir it occasionally (at least once while it's baking)

-when it's done, leave it to cool off completely before transferring it to an air-tight jar/ container

I'm a big fan of crispy food, so I definitely enjoyed this granola, with its cocoa+peanut butter flavor. It makes a delicious and filling breakfast or dinner (I sometimes have it in the evenings as well), it makes a great snack to crunch on and you can never go wrong with topping your smoothie with a bit of delicious granola!
