Buckwheat Breakfast Pancakes

Hello people! This week just got better. "Why?"- you ask. Well, I'm here today to bring to you an amazingly delicious pancake recipe, that is so wholesome, healthy and easy to make.


Oh, the simplicity of plant-based eating. Without further ado, we're gonna jump into the recipe, hypothetically of course. :)

for this recipe, you'll need:


-2 ripe bananas, mashed

-3/4 cups plant-based milk( I used walnut, but every kind works)

-1 tsp vanilla extract


-1 cup pure organic buckwheat flour

-1 tbsp ground flax seed

-1 tsp baking powder

-1 tsp cinnamon

-pinch of salt


-melted coconut oil(for the cooking on pan part)

directions:


-firstly, mash the bananas in a big mixing bowl, and to them add the plant milk and the vanilla extract;

-to the wet mixture, add the buckwheat flour, ground flax seed, baking powder, cinnamon and pinch of salt;

-finally, you should end up with a partly-sticky pancake blend;

-on a frying pan, add a bit of coconut oil(repeat this step as you cook the pancakes when you notice that there's not enough oil) and with a tablespoon make small circles of pancakes and let them cook for a couple of minutes on each side, flipping them half-through.

Did you know?

When you use pure organic flour, that has not been processed chemically and bleached, the flour itself will withhold its natural nutrients, fiber, vitamins and enzymes, making the flour wholesome, nutrient-dense and better for digestion. Only when you use an organic flour or whole wheat flour, your body is able to absorb all the nutrients from the grain/seed, depends what type of flour you're using.

My warm suggestion: enjoy these wholesome and simple pancakes with a spread of some nut butter of your choosing(today, my family and I used a bit of peanut, almond and cashew butter, all homemade and natural), cut up banana coins and crushed frozen raspberries.


As you can see on the photos, we also used a little sprinkle of homemade granola and a drizzle of some maple syrup, but just for presentation purposes. They were sweet enough to us, but because everyone has different taste preferences, you can add drips of maple syrup to yours. :)
