Almond Biscuit Slices

A few days ago, as I was experimenting while making this dessert, I ended up making these Almond Biscuit Slices, that are honestly very easy to make (don't let their fancy look scare you and make you think you can't make them). The biscuits have an almond flour and oat flour base (you can make these flours yourself, how cool is that?) and to that, you just add coconut oil and maple syrup. In my opinion, this is absolute heaven.

The texture is so nice and it has a heavenly flavor and this peanut butter + dark chocolate drizzle just makes everything better and it's to die for. So, let get baking!

ingredients:

-1/2 cup almond flour*

-1+1/2 oat flour**

-3 tbsp (tablespoons) coconut oil, melted

-3-4 tbsp maple syrup***


-1 tbsp coconut oil, melted

-2 tbsp peanut butter

-1 tbsp tahini****


-20 g dark chocolate, melted


*measure 1/2 cup almonds and blend them in a blender until you get a flour-like texture. TIP: if your blender is not that powerful, you can chop your almonds into little pieces and add them to the blender. That way, it's easier for you and your blender.


**measure 1+1/2 cups oats and blend them in a blender until you get a flour-like consistency. Given the texture that the oats have, making oat flour at home has never been easier


***you can substitute maple syrup with any other liquid sweetener you have on hand or desire


****you can a add a total of 3 tbsp of peanut butter or tahini (depending on what you have on hand, it's not a problem)

directions:

-turn on the oven at 180 degrees Celsius

-get your flour ready and in a bowl, add the flour (almond and oat). Mix to combine

-in a small sauce pan, melt the coconut oil and when it's melted, add the melted coconut oil to the flour mixture

-to that also add the maple syrup and stir everything to combine, until everything is well incorporated and you end up with a sticky mixture

-if the mixture is too sticky, just add more flour

-cover a baking pan (I used a long one, like for banana bread) with baking paper and to that, pour the mixture and press it down with your hands, forming a layer like the one in the photos

-bake for 20-25 minutes or until lightly golden

-leave it to cool before you add the drizzle

-for the drizzle: in a small sauce pan, add the coconut oil, peanut butter and tahini and stir it with a spoon until the coconut oil melts

-when it's ready, pour over the drizzle over the baked biscuit

-melt the dark chocolate and when it's ready, pour that over the nut butter drizzle as well

-place the pan in the fridge to cool overnight

-in the morning, take the biscuit out of the pan, place it in a plate and top it with your favorite topping if you desire (I topped mine with some Berry Banana Granola)

NOTE: store these slices in the fridge, because the drizzle melts really easy at room temperature.
